White wine

The Quatre Cépages is made of Chardonnay, Auxerrois, Pinot Noir and Meunier. The alcohol percentage is 12%.

Tasting Notes

  • Colour: light yellow with a green hue, bright and brilliant
  • On the nose: pure, mineral with fresh, exotic notes, white stone fruit and floral aromas
  • On the palate: fresh, fruity and slightly exotic, pleasant fine acidity 


Fermentation/ageing: soft pressing with a pneumatic press, fermentation at 15-16°C. Ageing on fine lees in stainless steel tanks for four months, batonnage in stainless steel.


Viticulture and terroir

Soil: sand-loam mixed with Diestian sand, ironstone, flint stones and gravel. Underneath this, well-drained layers of Ledian and Paniselian sand.

Climate: cool temperate climate influenced by the North Sea

Sustainable viticulture: defoliation, green harvest, 10 km of indigenous hedges and sowing flower seeds to attract natural predators, sowing grass to prevent erosion, using compost
